Peanut Chicken
1 tablespoon (15 ml) coconut oil
11/2 pounds (680 g) chicken, cut into 1-inch (2.5-cm) pieces
1 onion, chopped
1 red bell pepper, chopped
1 medium zucchini, sliced
1 tablespoon (8 g) flour
1 can (14 ounces/400 ml) coconut milk
Freshly squeezed juice of 1 lemon
1/2 cup (130 g) salsa
1 tablespoon (15 g) red chili paste
1 teaspoon salt
3/4 cup (195 g) chunky peanut butter
Hot cooked rice
IN A LARGE SKILLET, heat the coconut oil over medium heat. Add the chicken, onion, bell pepper, and zucchini; cook for about 6 minutes, until the vegetables are tender. Stir in the flour. Add the coconut milk, lemon juice, salsa, chili paste, salt, and peanut butter. Reduce the heat to low and simmer for 10 minutes. Serve over hot cooked rice.
